Linguine with Chicken and Veggies
This is a very forgiving recipe with a mild taste, just use whatever veggies you have on hand. Our family likes veggies cooked through rather than crunchy, so I cook them until they are soft before mixing them in with the other items. I also went light on the oil in the first step, probably using about 1/4 cup rather than 1/2.
Also, we use regular spaghetti noodles, and once box is too much. Probably 1/2 to 2/3 of a 12oz box is sufficient to balance the recipe.
