Quinoa with Chicken and Tomatoes
This is a really easy recipe that you can pull together quickly for those dinner emergencies!
You can skip the chicken and go vegetarian by adding lots of veggies to this recipe. A red or white bean could also be added.
I generally keep the chicken, but add some extra broth and a bag of mixed frozen vegetables. At the end I add some quick-cook barley to soak up any extra broth.
You could also substitute rice in place of quinoa, you would just need to adjust the cooking time.
