Southwestern Skillet (Chicken)
This is another easy recipe to double and freeze.
1 taco seasoning packet
1 lb boneless, skinless chicken breasts, cut into small pieces
1 can corn
6 oz small broccoli florets
6 oz frozen red/green pepper and onion mix
1 can black beans, rinsed and drained
1 cup salsa
Tortillas or taco shells
1. Follow instructions on taco seasoning packet to cook chicken.
2. Add vegetables, beans, and salsa. Reduce heat to medium.
3. Cover and cook 6 to 8 minutes, stirring occasionally, until vegetables are ready.
4. Serve onto tortillas or into taco shells. Top with cheese.
