Sunbutter Bites
My son found this recipe in his Highlights High Five magazine. It was written for use with peanut butter but works for sunflower seed butter too!
Here is my adapted recipe. If you want to make it even more of a dessert, replace the raisins with chocolate chips.
Ingredients:
4 Graham Cracker squares (or 1/2 cup Graham Cracker Crumbs)
1 cup Sunflower Seed Butter
1 cup Powdered Sugar
2 Tbsp Honey
1/3 cup hulled sunflower seeds, unsalted
3 Tbsp Raisins
1. Put the graham cracker squares in a plastic ziploc bag and use a rolling pin to crush into crumbs. Place crumbs in a shallow bowl.
2. Mix together Sunflower Seed Butter, Powdered Sugar, and Honey until powdered sugar disappears.
3. Add Sunflower Seeds and Raisins and mix.
4. Roll the mixture into small balls, then roll in Graham Cracker crumbs until coated.
5. Chill for one hour.
