We received an ice cream maker as a gift and have used it fairly regularly. We have the Cuisinart 2-qt ice cream maker. I have no complaints about this product and it is very easy to use. It only takes about 25 minutes to make ice cream. Often I will start the ice cream maker right before we sit down for dinner, and we’ll have fresh ice cream by the time we finish dinner!

There are tons of vegan ice cream recipes online. You can locate these through a quick google search. If you are the type that prefers cookbooks, consider Lick It!:
I recently purchased Lick It! and just this week I made Mint Chocolate Chip Ice Cream. Next, we plan on making Cookies and Cream and Cookie Dough Ice Cream. It includes sorbet and sherbet recipes as well as shakes, pies, and cakes that are ice cream based. Most of these recipes use canned Coconut Milk as the base, so if you are not able to eat coconut milk this is probably not the book for you. It also has several nut recipes that we will be unable to use. However, I sometimes prefer books to online searching and am glad I purchased this to have on hand. Even if you don’t have an ice cream maker, this book includes information to how to make ice cream on your own.
I have not seen or read this book, but The Vegan Scoop is also a highly rated vegan ice cream cookbook on Amazon. It appears to use soy as a base for most recipes.
