Vegan Doughnuts

To me, this is not a substitute for your favorite doughnut shop doughnuts. They really taste more like cupcakes that are shaped like doughnuts. If you are wanting to find a less sinful or homemade version of your favorite doughnut, this is not it. You'll probably be disappointed.
But, since my son with allergies has never had a "real" doughnut, these work just fine! All he knows is that they look like what everybody else eats, and they taste good. That's a recipe for success in my book.
I happened to pick up a mini doughnut maker on clearance a couple years ago so it is what I used. But, you could use a doughnut pan and it will work just as well (or it would be great for a batch of mini cupcakes).
For frosting, I mixed about 1/4 cup of Enjoy Life Chocolate Chips with just enough coconut milk to smooth it out, then drizzled it over the top along with some sprinkles.
