White Chicken Chili
This is the link to the base of the recipe that I use. However, I make quite a few changes.
I make very large batches of soup, so I double this recipe. I find the spices are not quite enough so I triple those.
I add beans, who wants chili without beans??? I use somewhere in the range of 4-5 cans worth of great northern beans.
I also add a pureed vegetable. I always have mason jars of pureed sweet potatoes or butternut squash in my freezer, so I add around 12-16oz of pureed veggies.
What really completes this recipe is hot sauce! We don't like super spicy foods, but some hot sauce is necessary to make the flavors all come together. I don't put it in the big batch, but just add it to bowls at it is served to accommodate everyone's taste.
