Chocolate Chip Cookie Pie
I think it's a stretch to call this "healthy" but at least one empty calorie ingredient is being replaced, the flour.
The flour is replaced by white beans. While this doesn't quite have the texture of a traditional cookie bar or pie, the chocolate chips really make up for it and I think the average person would be surprised to hear that beans replace flour. It's not that noticeable.
Give it a try! I followed the recipe closely (just be sure to use dairy-free chocolate chips), except I used a greased 9x9 baking dish. I think you can use any variety of dishes to achieve a thin or thick cookie bar, but your cookie time will vary so watch closely!
