Edamame Succotash
We really enjoy this side dish and it looks pretty too!
We have also used small sausages in place of the bacon, but if you're looking for a healthier take than you can skip the meat entirely.
If you're not familiar with edamame, be sure to buy it already shelled. It will look like lima beans shelled. If it is not shelled it will look like snap peas still in the pod.
