Sunflower Oat Bars
Here's the original recipe for no-bake, sunflower oat bars. These are a great option to replace commercial "protein" or "energy" bars, which are often candy bars in a different package. Plus, good luck finding one that doesn't contain nuts or isn't cross-contaminated with nuts!

It is tempting to try and cut the sugar by skimping on the brown rice syrup. But, you really do need nearly the full amount if you want these to stick together. Also, I like to warm the sunbutter/syrup mixture for about 20 seconds. It helps make the mixing easier.
2 1/2 cups rolled or quick oats (I used quick oats
1 cup sunflower seeds (I used a mix of raw, roasted/salted, and roasted/unsalted)
1/2 cup raisins
1/2 cup carob chips (I used Enjoy Life chocolate chips)
2/3 cup nut or seed butter of choice (I used Sunbutter)
1/2 – 2/3 cup agave nectar or brown rice syrup (adjust based on how well things stick together)
(I prefer brown rice syrup...agave is a little sweet for our taste)
1) Mix oats, sunflower seeds, raisins, and chocolate chips in a large bowl.
2) Whisk together sunbutter and brown rice syrup. Pour into oat mixture, and mix well, till everything is sticky and combined. If it’s too dry, add a bit more syrup. You may need to use your hands to mix it well.
3) Press mixture into a shallow baking dish that you’ve lined with foil or saran wrap. Cover with more foil/saran, press well into the baking dish, and refrigerate for 4 hours. Cut into bar shapes, wrap, and keep refridgerated till ready to use or freeze in individual servings.
